I just received my wires for my speakers.
I've ordered the silver plated 16AWG from Jantzen: http://www.jantzen-audio.com/wp-content/uploads/2018/12/Cable-Catalogue.pdf
But to me what I received seems super skinny. Is it possible this wire is 16awg?

Need a caliper... Not a ruler to measure wire gauge.
Beyond that the Insulation layer is not part of the wire gauge

To be more precise, open out those internal wires, measure one (or a couple, just to average results, calculate individual section and multiply by amount of wires.
You need a micrometer
not a caliper:
although a caliper with a digital indicator might do.

Do you need a special micrometer for golden wires? And if the insulation is teflon? Because high quality materials in the cable are fundamental for audio reproduction, and a micrometer "berreta" will not perform as good as it must.
FWIW, I just use a wire gauge drill bit chart, so a stripped end should be a 'comfortable' fit in the 1.3 mm hole.
