I'll be using a Hammond 125 B trafo and it can be wired for 4,8 or 16 ohms
I thought that for 16 ohms speaker the amp would need to delever less current...
No, it's exactly the same in all cases - it's only the current through the speaker that is less, but the voltage is more so the power is the same.
As I've mentioned previously, historically valve amps tended to have 16 ohm speakers - it was the advent of solid state amps (where you don't have transformers) that brought the impedance down to get higher powers.
