Am pretty sure every once in a while a solder pad comes off the board. What do you do? I have thise problem only where there are no traces (just the solder pad to hold component down {other side is where trace is} ).

Use a bit less heat. Try a smaller iron. Who made the board? If the board is old and been subjected to heat, that won't help the problem. Just be extra careful is about all you can do.
If it is just the "donut" that lifted, with no traces involved, it isn't much of a problem because the electrical integrity hasn't suffered. Just make sure there is solder in the via (if plated) and on the topside to hold the component. You could possibly add a small blob of solder to the component lead (with or without a wirewrap) for mechanical strength.
