I have built a simple non-audiophile 2 channel amp. using the OPA2544. I used 3 leg output speaker connectors so when one side is not in use, it is connected to a dummy load. But what would be the best for the inputs when one side is not in use - left idling? Grounded? Recieve a little of the signal?

Solid State amplifiers are different from Valve amplifiers in that an open circuit load does not damage a properly designed SS amplifier.
If you want to ensure the idling amplifier has least work to do, then inserting a shorting plug or better still a resistive plug that mimics the source impedance presented by your source, into the empty input socket will do no harm.
