For a first project I would like to replicate a design like this:
Goal: switch 1 input between 4 outputs.
For the rotary switch, is it correct that I need a 2-pole, 4-position, non-shorting switch?
And, if you can recommend one, I would a appreciate that too!

These are cheap and cheerful and of decent quality. All have adjustable end stops so either would work OK.

Those Lorlin switches are very good value for money. You could make something a lot better and cheaper than that design from Douk

I thought so. Smaller too...i'd probably 3D-print an enclosure (unless there would be shielding issues...maybe better shielded wires?).
You could get away with shielded wire in a plastic case. Personally I'd use metal enclosure as well
