Oh, and if this type of switch is NOT recommended - are there any kind of Thru-hole headers or something with say the pins soldered to the board and some kind of a "slide on shorting stub". Probably commonplace but I don't know the terminology

I prefer the rocker style of switch, it's got a more positive-action switching behavior than slide styles.

You could use as you suggest the standard .1" header with a shorting plug. Computer boards often have them. Old IDE disk drives used the plugs to set options. I took a quick look on digikey but could not find them. I was probably not searching correctly as they are super common. It would save a bit of space over a switch and since you plan on leaving it it fixed after testing, might work better.
