can I treat the rectifier as 30a (2x 15A) if using both anode terminals?

Yes, you can parallel them as a single 30 amp diode. Keep the path lengths equal, especially for higher frequency operation.

Still, derate them somewhat to account for the lack of perfect current sharing.

Its not a transistor, there's no secondary breakdown to worry about... In fact the power dissipation decreases with rising temperature for fixed-current situations, so they will share fairly (I suspect its a single die anyway).

They are as close to the same temperature as they are going to get. Temperature is the big variable in vbe (Vf).
