Question about Pots and volume control

If a schematic uses a 50k pot for volume control and it was replaced with a 250k pot, what effect would it have on the overall performance of the amp?

Would it make it louder, quieter or would it completely mess up the rest of the circuit.

It depends on the particular implementation, if they are doing something a bit unorthodox. But assuming not, it should not change the level noticeably, maybe a tiny bit more noisy but not that the ear would notice.

Ok thats good coz i have a box full and have no idea what resistance most are.

Potentiometers are usually marked, even little trimmer types, and if they aren't it's nothing to measure them with a multimeter. A simple plot of resistance vs shaft position can even tell linear or log taper.
