Can I use two identical power supply chokes in parallel to double the current rating? Halves the resistance and doubles the reactance, right?

If they match well enough.
But a parallel inductor connection halves both the inductance and the resistance.
This is due to both resistor and inductor reactance being proportional to R and L respectively.
Capacitor reactance is inversely proportional to C, so parallel capacitors do add.

I've used this with identical chokes with no issues. Can be useful depending on what you have in your stock.
