Heat has a lot to do with it. That's why my bacon is very limited in the nitritesand certainly carcinogenic.
Not meaning to be too picky here but Nitrates and Nitrites get bad names when in the wrong hands and misunderstood by so many. Being someone who cures his share of meats, I ask you to read this before bringing forward such bold statements.

Man, that stuff is in most supermarket produce along with a list of other toxic chems, Anything that is heavily processed has no life left in it, often toxic, most deep fried whatever, is carcinogenic, acrylamide from high temp oils, wheats and sugars.
