Mine do, but then they are 40+ years old.
I have one that's adjustable, I made it as an apprentice toolmaker 50 years ago. I'm in Lanzagrote at the moment, when back home I'll put a picture up.

I've never seen one in 45 years of using them. On this side of the pond the good ones are constructed of heavy duty box sections instead of I beams and have solid acrylic square vials instead of round tubular ones. They're never off, but that doesn't prevent the level from being abused, such as being used as a pry bar or clamping a straight edge, which oddly enough, causes it to become no longer straight. 😵
Practically every brickie here uses German 'Stabila' levels which get a really rough life and can take it. They're used along with a trowel and lump hammer to adjust a course of bricks and end up dented and chipped, but retain accuracy for years. They aren't intended to be adjusted.
I have three well used ones inherited from a family bricklayer. I actually just used one today as a circular saw guide.
