Point to Point SET KT88/6550 Build

Hi Guys
As more as I try to inform myself as more I get lost ...

After a few nice builds using pcb boards I would like to build an amp using poing-to-point wiring for my next build.
As I don't need a lot of power I thought to build an amp around KT88 tubes, but single ended. Iron to be defined, thought about Tango or Silk will see.

During my searches I found two designs I like: One is from Doug Tuthill, the other one from Jean Hiraga who uses a pp design on the first stage.

I would appreciate a lot some advises on the two designs, especially about the difference on the sound (the expected one). The music I hear most is Jazz and Jazz voices.
