Any schematics on a truly great sounding phono amp for a
Denon DL103 cartridge. I would like to add either a Tamura, audionote or Sowter transformer as the stepup to the design.

For MC you need something serious. There are some attainable
designs out there (parts available from multiple sources/non-budget
breakers).
1. Morgan Jones 5842 RIAA or EC8010 RIAA amp. You will have to
buy his book to get the schematic. Uses high gm tube to get the
noise way way down. EC8010's are around for about $30/pop
however they last a very long time.
2. Allen Wright FVP-5. Schematic is online at www.vacuumstate.com
(SP-15 article). This is a 6922 with a high gm JFET cascode. This is
probably the cheapest and easiest and most attainable of all the MC
preamps. The matched JFETs can be had from www.borbelyaudio.com
3. Thorsten Loesch Toccata. E810F's using S&B LCR RIAA networks.
Probably will cost $1000 just for th parts. E810Fs are expensive but
very high performance tubes.

in mu-metal, for various step-up ratios.

One of my favorites... Allen goes into this in detail in his Preamp Cookbook -- another recommended volume.

I have built this using air-vane tuning caps in the equalization network and it is superb!
I call mine "Korrektorix" 😉
The air-vanes allow me to adjust playback characteristcs for older records.
