so the actual kit may come with an instruction book saying other modifactions that you can do?

Sometimes yes. At the least, the info you get will be good enough for the forum to help.

Also..should siganl to noise ratio be taken into account?....is higher better?...because the altronics one is -84 Db @ 300mV

IMO this is good enough for what you want to do with it, and it is not the most important factor.

-84 dB means the signal is 84 dB louder than the noise.
For your ears, that means the signal is more than 256 times louder than the noise.
