I don’t know about you guys but ordering parts is my least favorite thing about this hobby. Mouser and digikey are my go to places but their systems make it difficult. I can create a list on their websites but generating it accurately takes me way too long. I’m doing all this on my iPhone (11) using cellular data. I don’t have access to the Internet via wifi which may be the biggest issue. Please advise me how best to handle this

I think the best way is that you should buy a cheap Notebook/Laptop with a 15 inch screen. Then you have very comfortable access to Mouser.

I would also suggest a cheap laptop of some description.
And instead of getting internet via an isp, you can tether the laptop to use your phones mobile data.
A larger screen and proper keyboard will be far easier than fighting the phones limitations.

Get a Chromebook with a 15" screen, new or used. If you have no Ethernet or Wi-Fi, go to Starbucks, Panera, etc.

Most have 13" screens, but you may want to get the less common 15" screen if you have vision problems
or want to have several windows open at once.
Chromebooks will never give you headaches like Windows does. It just works. It will be the best $200
you ever spent. I have several of them.
If you already have a Google account, all you have to do is log in. That's it.
