I don't think it's a particularly difficult guitar solo, but Last Night by Lush is pretty good in either the original or hexidecimal dub mix.

If you are looking to find new modern day artists, many are YouTubers and spread over spotify. And also many do instrumental covers of many popular tracks.
These to get started. Although I like it a bit hard.
