I am starting my first amp project and don't know what makes a good power chip. Do I look for good specs or are there other less obvious influences that go into the overall sound quality of the power chip?

Start your first amp project with a mod on an amp you have.
Then move to a kit. . .digital amp is quite simple amp project.
Then move to a analog amp kit.
Then move to build the whole thing yourself.
All this after hours, and hours of listening.
After all that, you will know what makes a good amp chip.
Each amplifier type uses different chips for specific reasons;
in the end, all the chips inside an amp work together so all
make an amp sound good or bad.

It seems that two most popular chips are LM 3875 and LM 3886.
There are plenty of projects that are already made with these two.

Maybe as a second project or so, even more fun would be to build amp that not use chips.
These are not allways complicated, and there are simple ones that
are almost as easy to build.
There are several very simple and highly regarded designs like
Hiraga, JLH, Jean-Marc Plantefève, Nelson Pass, ... ;
