There are a million and one sites just google Electronics tutorial the read until your eyes bleed.
I'm still learning myself. TBH i think everyone here is.

Here's a good site I'm reading through at the minute: Elliott Sound Products - DIY Audio Articles
It has a lot of information on Amplification and electronics. TO be fair modding an existing MP3 player is not painfully difficult. Search for iMod or something similar on here to learn about the iPod mod.
TO build your own MP3 player from scratch now that would take a LOT of reading. Have a look on the Texas instruments and Wolfson Microelectronics websites. There's loads of decent information on there. If you wanted to start half way you could purchase/blag an evaluation board from them. That's what I did for my DAC (blag, not purchase of course).
In terms of easy projects to get you started (assuming you don't want to delve into Loudspeakers which is where I started) I'd take a look at building a CMoy headphone amp. Bits cost about £15 max and its easy as pie. Then I'd look at building a GainClone chip amp which is marginally more difficult.
You could look at buying one of those cheapo flash MP3 players and ripping it to bits to see what's in there. Have a search on this forum for Flash MP3 player or something similar.
Just my 2 cents...
Thanks
