they have excellent INL/DNL and noise performance, indeed.
but their THD / SFDR may not be as good as.
I found SFDR/THD spec on AD5781/5791's datasheet.
Spurious Free Dynamic Range:100dB @1 kHz tone, 10 kHz sample rate
Total Harmonic Distortion:97dB @1 kHz tone, 10 kHz sample rate
This is not better than old PCM58P...
These spec may improve with deglitching and so on technics.

odd test spec - maybe inadequate anti-image filter for 10 KHz sample rate?
for a "1 usec settling" DAC 100-200 KHz should be fine, hard to imagine what dynamic errors would show up 100x below rated settling time

The dac is very clearly an instumentation/industrial purpose chip, hence measured & optimised for a bit different set of specs. Don't think one could say if it would be good or bad for audio without trying it.
If UltraAnalog were still in business, they would likely take this chip & seal it up in epoxy with some peripheral circuits & call it a $200 hybrid dac module.;-)

Expensive, and not well know (not really "designed") or marketed for the audio industry. (The datasheet or the AD product page make no refs ot audio use).
It is classic single multi/R2R DAC, but it's manuf's, stocked and warranty-backed by a MAJOR semi manufacturer.
Schiit Audio is using it... (no free link for them, just Google the word)
Schiit was partly founded by guys from Theta, so they may have stumbled onto something interesting.
Come one folks, pull out those TDA1541s and PCM63s outta your dinosaur CDPs and swap in a pair of these "new" toys ... and report back below ...
