Do you think 250w/8ohm - 500w/4ohm (Pascal D module on Marani plate amp) will be enough to drive the 18 inch woofer?

Depends on how loud you want or need it.
Just taking everybody's published specs as true with 250W@8Ω your max volume would be 122dBspl@1m.
A significant part of the dynamic 'PA' sound you are after comes from sufficient clean headroom in the system, personally I aim for 12-20dB.
With that in mind you could listen at up to 110dB average and that is damn loud unless your room is large and you listen from further away.
You could gain a bit by using the 4Ω version of the FH510 which seems identical to the FH500 except it has a ferrite magnet and here in the UK it is £35 cheaper.
Starting to make sense now but luckily my amps have rather over-engineered PSUs and quite happy to run nominal 2Ω loads at full power.
On a side note and for future projects could I avoid these probs when using class AB chip amps (like LM3886) by increasing PSU capacity above the minimum recommendation?
Don't get me wrong, it usually still makes a difference (with better amps), and given other factors - can make a difference that is easily audible. It just might not be as "profound" a difference. (..I've got a Reckhorn sub-amp that isn't truly stable into 2 ohms, let alone 1 - yet has massive current reserves that doesn't present as great a difference with compensation, though not so little as to be inaudible.)
Most chip amps are 4 ohm stable (even with an "oversized" power supply). Note: Chip amps usually have current limiting circuitry along with voltage regulation. ..BUT I think it's still parallel capable so with enough chips, heatsink, and of course power supply, I think it's "doable" - in fact I think Rowland did this with the lm3886 (..though it didn't have the current capability of something like the Krell 150).

Thank so much to everyone guys.
Another question: what about using a Tactrix Horn instead of the STH100?

The Beyma TD194 or 164 look like good horns but I can't find any user comments on them which seems a bit strange.
