I would like to build a multiamp based onto chip amps. I think it's better to use the same chip for bass and midrange/tweeter, isn't it ?
When making such a multiamp, it is not necessary to have the same power output for bass and midrange/tweeter. This can be obtained by using different power supply for the different amps. The general volume being controlled using a pot before the active xover. However, my question is : Does the output power increase in the same way for the two amps when moving the general pot ?

Yes, so long as the gain for both the amps is set the same.
If the mid is less sensitive than the tweeter though, you can also match the levels quite easily by using a lower gain in the tweeter amp. The volume of both drivers will still increase uniformly as you turn the pot

If you have different gain settings for the tweeter/woofer amps, I think you might reach maximum output/clipping with the woofer first (assuming woofer is set at higher input gain). Would it make sense to have multiple chip amps for the woofer (parallel and/or bridged)?

Well, I think a single chip is sufficient for my usage for the woofer. The load is never less than 8 ohms.
Do you suggest that another way to have different power output is to have one chip for the medium/tweeter and two chips in bridged mode for the woofer, with the same gain and the same power supply ?

I think as you mentioned in your original post you could avoid that situation by using higher supply rails for the woofer amp.
To be honest though I think aside from a slightly greater heatsink requirement (not much anyway for 8ohm loads) theres little to be lost from operating both amps with rails around +/-38V
