I am about to build a Mullard 5-10 amplifier. I plan to use it with guitar, mainly.
I want to build it stock and see how it sounds, but I'm wondering if it won't be too hi-fi for guitar use?
Any opinions or suggestions are welcome...

IMHO, bad idea. The 5-10 is a hifi amp, it's not a guitar amp. It's meant to be driven by a low impedance source such as a preamp; that's why the tone stack is at the very front.
You can build a much better amp with the same tube complement of EF86, ECC83, and 2xEL84. Take a look at Vox's, for instance.
