I’m slowly making progress on building some active speakers and am considering using a MiniDsp. Which of their products offers the most flexibility? One that could be used with a 2,3,or even a 4 way system? Something that allows me to experiment without having to replace the dsp when the system changes.

you also can model and design with the MiniDSP, then translate the transfert function with passive elements with some online calculators like at mh-audio.com.
Or keep your MiniDSP in the low and make the mid-tweet cross-over passive.

I am enjoying the flex eight a lot. An ADC would make it better, but I’m not complaining. It’s very easy to use.
If you use a good isolated front-end, it is certainly a good device : I like the volume control pot. How do you feed yours ? Laptop, Rpi, ?
I use a RPi running piCorePlayer as the input to the Flex Eight, via USB. The Flex drives 3 stereo amps for 3-way open baffle speakers I built. It’s been fun so far and I believe the sound quality is quite high.
I use analog inputs on both my Flex and Hypex, because I have a surround system, and the only option is to use the analog outputs from the AVR. That’s why the Flex was my choice instead of the Flex Eight. There’s also balanced outputs on the Flex, which the Eight doesn’t have.
I really like the Flex. Far better config software than the Hypex. It can also be adjusted in real time, compared to the Hypex where you need to upload a new config every time you change something. The Flex sounds very transparent to my ears. At that price tag I can’t find any better option, if at all, regardless of price.
