Could someone confirm this for me?
It is possible to take 2 meanwell 24V power supplies and wire them to make a +24/-24 power supply. With that power supply I could power 2 amp boards as long as their current draw is less then the combined curent output of the SMPS is.

This is potentially damaging, so you should be more specific. What Meanwell model do you have in mind? With such a bipolar supply, there is no "combined current output." The output is the same as either supply itself.
Some SMPS have a Y cap (between 1 and 10nF) from -bus to earth, and each out t earth, or -out to earth and or a line filter with a Y cap from L and N to earth or to -out. If earth wire isn´t used, the amp can get hum from this caps.
