Are there any low mu triodes operating at low voltages (i.e. under 800 volts) that want plate Z in the 5K range (somewhere between 5K and 8K) that will deliver 100 watts???

The short answer is no. Even if you did find a tube with those sort of specs, the design requirement are going to be ridiculous.
The GM100 was the first tube that jumped to mind, but it will require voltages well above 1KV, and the filament alone draws more than 200 watts a piece.
