I looked around a bit, and the only things I can see are the lab equipment, and that's pretty expensive (mid to high 3 digits). All the cheaper ones seem to max out at 12V. I did find a few 36V units at Digikey, but I have no idea if they're any good or not.
So... does anyone have a recommendation for something like this? If I can't find one, I'll build one, but I'm hoping there's something like this out there.

OK, maybe 500mA - 1A would be more realistic. In other words, I don't want a 100mA wall-wart.

An Aleph Ono draws 60W continuous on 2 x 32V. Ok, that includes a fair amount of LEDs for the display, but any class A phono amp, biased high enough can draw just that.

For that purpose you might want to look at the Aleph Ono Power supply. Its fairly simple, and supplies just what you need.

I found a few switching supplies at Newark etc. that would fit the voltage/current needs. But a switching power supply on a phono stage... that can't be good, right?

As long as you make sure the PSU's are well filtered and/or have their switching frequencies above 25kHz. Those switching supplies on Newark are often industrial EMC class, and emit more noise than one might want in a phono amp. If it goes wrong you could try adding some filtering yourself, but that works up to a certain level.
Have you considered taking two single 36V linear regulators (wall wart style) and hooking them up in series? Use the center tap as virtual "0V" connection.

I only need single-ended 36V, not +/- 36V. So a single 36V linear power supply is exactly what I'm looking for. Where do I find such a thing? All the ones I see are switching, or 12V. And it doesn't have to be exactly 36V. The regulator in the phono stage needs something above 35, I could probably go up to 45 with no problems. Don't know about 48.
If its going to feed a regulator; why don't you just use an appropriate transformer, rectifier, and caps?
