The best Kit I ever bought was a HeathKit AA-151. Simple circuit with the tone control and phone amplifier section removed--pentode-triode driving PP EL84s, common GZ34 rectifier.
I stripped everything out, bought an assembly manual, some terminal strips, incorporated some slight modifications, ordered all of the parts, wire and then built it.
It took quite a while to build it since I used Russian PIOs for all of the coupling caps and had to figure out how to get them under the chassis.

I am going to build the Edison 60, which will be re-released later this year. There is a review of the old one at tnt-audio. I heard it more than 10-years ago and it was overwhelming. The kit can be built as PP, SE or UL which is nice so that you can try out what you prefer.
Their homepage is under contruction but this is the link anyhow: Hesselvall Audio

Brilliant, sold, thanks. I'm emailing them right now. I'll let you know how it goes.
Wow, there's actually a whole 'nother page of suggestions! Thanks to everyone for the detailed replies. It's going to take me a while to go through all these but I'm bound to find something I'll end up using and liking here.
Cheers!
Cheers!
If want a kit with everything included, may I suggest World-Designs from the UK.Superb kits that perform way above their price.I've had several over the years and all have been great.Best VFM would be the KEL84,an EL84 PP amp of about 15w/ch.I've heard this amp walk all over commercial offerings costing thousands one more than one occasion.See here-

waaaaaay too many variables Glen - at any of those price points you can be either thrilled or disappointed. Well, in Aus the $100 is out, but north of $250 and you can be in the hunt.
North of $250 is fine, heading towards the $1000 mark gets less fine and over $1000 is out of the question. Prob $400 was what I was thinking, but there's a bit of room to move there. (Especially south) 😉
What is your objective? An end in itself, or the start of a process?
Both. I want a simple amp that I can use in a small home theatre setup and that I can appreciate both for it's sonic and aesthetic qualities (within the limits of my budget of course) and I also want to start the process of learning about the intricacies of these devices so that I can build bigger and (hopefully) better devices down the track, with more involvement from me in the design and construction. That's why the Edison 60 sounded so enticing - a simple and (I assumed, correct me if I'm wrong) complete kit with options as to how I set it up so that I can start fiddling.
What are your physical, financial and capability limits?
I have a temperature-controlled soldering iron and plenty of experience using it. I would be happy building a chassis and mounting all the parts, and could manufacture a circuit board from scratch if that's what was required. The thing is I don't have much experience with metal work or high-voltage PCB design (I keep reading about burnt circuit boards) so I would be happy to offload these considerations to the pros. The Edison 60 looks pretty amazing and I would be happy with an outcome like that.
What equipment is it to be used with?
Speakers = my flatmate's floor-standing speakers (will get back to you with brand and electrical details and please excuse my ignorance of these matters)
Input = standard CD/DVD head unit, computer lineout/headphone jack, phono (hopefully, I suspect a preamp may be required here?).
Are there any other questions I should already have the answer to for this section?
What equipment is it to be used with?
2 Welling floor-standing cabinets each with 2 6", one 4" and one 1" speaker, 6 ohms, 50-120W rated max power, 89dB SPL.
GlenSify,
please let me know when (if) you get a reply from the Edison 60 guys. I have been in contact with them on another forum, but they haven't replied when I ask for release-date.
They are not exactly good at using the internet either as you might have discovered. The one responsible for the construction has a homepage on his own (Erik Andersson) that can be translated with google if you want to know more about him.
