I asked for a 24V transformer but got one with 2 12V secondaries... i.e 2 poles each marked 0v and 12v...

Two 12V AC windings connected in series with the right polarity will produce 24V AC (0V otherwise), but those 24V AC won't produce 24V DC when rectifified, they will produce almost 33V to 38V DC without load (1.4 or 1.5 times the AC voltage).

Many thanks, the company offered me a refund, but now I will have to wait for transformers to be wound for me... I so wanted to hear what the amp would sound like today

Of course you can use other types >= 50V (ceramic, film -- for decoupling?). I'm still not sure about this. Maybe a good 'lytic of 10µ..3000µ does the job, but check for oscillations. 0µ1 in addition is safer, but maybe sonically more difficult??
