Well, HDMI is digital, and carries audio.
Also, with the USB camera connection kit, you can hook up USB audio devices. It definitely supports UAC1, and I think it supports UAC2. It also supports USB MIDI controls. You may need to add a powered USB hub for higher power devices, though providing power through the lighting port may take care of that too.
The USB connection kit works with iPhones now too. In fact, I bought a cheap knockoff cable to try and it works. In fact, I just hooked it up to my UCA202, without a hub, and used it successfully.

If the USB AES/EBU interface presents as a USB audio endpoint, then I'd think it would work. I think the USB MIDI and Audio was added to iOS with pro audio in mind, and from what I can tell as an outsider, it seems to have found traction in pro-audio niches.

I have not done this yet, but I'm planning to get something that will convert USB into digital audio, either S/PDIF Coaxial or Optical Toslink can work for me.
Meanwhile I am using 3rd gen AppleTV with its optical tosslink out going into DAC. If optical is a good option for you the 3rd Apple is new $60 USD these days. It's so inexpensive because AppleTV 4th gen is available now. 4th Gen has HDMI only. The wireless connectivity is nice, but every day or two it drops, and I have to reboot the wifi router and iPad. Although it's difficult to confirm with Apple, I think AppleTV is limited to 16/44.1, which is equal to red book CD quality.
That's why I want to get a USB converter, so that I can realize the full potential of my 24/96 DAC. I like Tidal hi-res Streaming to AppleTV, but again I think it down-samples it. If I convert FLAC into Apple-LossLess for iTunrs, I think I need to be wired with USB to get the highest quality into DAC.
If USB is best option for you, then Camera Kit is the way to do it, get a Powered USB Hub too, that way there's no potential for iPad to say "I can't run this devise, it requires too much power".
I was looking at Gustard USB converter, it looks nice, and I like the display which shows the sample rate it is putting out. Seems spendy at $170. A $30 one would probably work fine for me so long as it will do 24/96. The Gustard has AES/EBU that you mentioned. If you'll be the ginnueipig to try it, let me know if it works out. There are other USB DACs that are 'known' to work with iPad. I'm assuming you already have a nice DAC and you need the AES/EBU to make it go?
To be honest, my hi-fi is sounding super-awesome now. I'm not sure that I would gain a lot of quality by getting the Gustard. Right now I'm building some subs instead. They're designed to be a perfect match for my speakers, so I'm having fun with that project now instead.
