Thanks, in the link there are two ways (input & output): attached schematics, used for regulators Q17-18 K982 & Q22-23 J148 and for driver for Borbely power amp Q5-6 J148, wich metod have I to use and what VGS it's best suited?

The absolute value of Vgs is probably not too important as long as it's within spec's.

In general MOSFETs are enhancement mode (there a few exceptions), JFETs are always depletion mode by their nature.
For MOSFETs Vgs device variability is a fact of life, and it changes with age and use too due to ion migration effects (modern devices are a lot better for this).
