I have a couple of these boards on the way, and I've scoured through the documentation hoping to find out how to wire signal sense/auto-on for these, but to no avail...

There is just some stuff about standby mode (whatever they actually mean by that), and not signal sense like on the 200ASC documentation. But they clearly state that the As-series (like the ASC-series) have "wake-on signal sense".
Could anyone help me out? 🙂

There's no mention of signal sense for these modules in the datasheet. The "standby" controls (and "amp disable") are just control pins that you can either control via simple switches or wire to external circuitry, but I don't believe there is anything built in here.
The comments on the AS-series are probably from before the 100AS and 200AS were launched - as you are probably aware these are not fully ICEpower-designed but based on TI's TPA325x amplifier chips and ICEpower-designed PSUs.
