Don't know about a specific step-by-step how to, but you can learn more on the Audio Circles, searching for posts by "art" among others, and, of course, on the Slim Devices forum.
worth having a look at the I2S reclock circuit from John Swenson here:

I know that it is 4 the SB2 and part of the circuit sorts out the different I2S format on the SB2, but could be a good place to start.
I would open up the Duet and have a look, combined with the Duets DAC data sheet and good eyes you should be able to trace most of the wiring for those I2S signals.
