I just bought 2 Dap pro MC 15 speakers which deliver 350 W RMS at 8 Ohms so in theory I would need an amplifier that would be able to supply at least 350 w per channel. But would it be a major drawback if I would get a weaker amplifier? Say around 275 W per channel at 8 ohms. Or do I have to meet the required power conditions?

It depends how loud you want them to play. 275W will be quieter, but not by much (roughly speaking 10 times the power will be twice as loud)

The speaker doesn't deliver power, that is for the amplifier to do. The speaker handles power. It can take as much as 350 watts. That doesn;t mean it requires 350 watts.
Imagine your truck is rated to carry 1000 kilos. That doesn't mean you must put 1000 kilos in it to drive around.
