The wood essentially does nothing other than act as a support. Just having the windings very close together is enough to get them to act as a transformer (in some fashion). Coupling is generally rather bad (without the magnetic core), as is efficiency, but it still works and you dont have to deal with iron losses, eddy currents etc..
