My house is a chimerical mess, with several generations worth of hodgepodge. Strangely enough, I have a fairly modern 200A entry panel, with a good deal of breaker space. I had a modern 120A subpanel installed in the basement, though there is still some tweaking to be done there.

You're set. Newer service with spaces left = you're in business.

I intend to piece things in a circuit at a time.

Add a few circuits while you're rewiring. Window air conditioner? Add a circuit. Kitchen? Install 2-20 amp circuits + 15 amp lighting circuit (15 amp circuit can supply several rooms lighting + a couple outlets). Computer? Dedicated circuit for outlets in that room.

Here's your chance to customise the wiring in your house for cheap. You can address any issues you have, just like laying out an amplifier. 😉 Get a 500 foot roll of romex and a few hole saws.
