If you stuff the board according to the no variation BOM, not stuffing both spots where there's a choice for components, then you have two trimpots per rail etc.
How do you adjust output voltage? Both component choice and the potentiometers? Asking before I get too far on the first board as I hate removing/replacing THT parts.

You should pick a voltage suitable for you, then you will get the needed parts. The full schematic is only for the pcb design. If you use LM431 you don't need any trim pots. If you read the documentation you will find info how to set the desired voltage but I think I have already prepared for all common voltages.
This is not a weird systems. All interested sign a list and pay me in advance, then I will order boards. The sad thing is that you were a bit late. Contact me privately and we will figure out something.
