Nice work! I don't know if it has been discussed here yet but many Sunn amps used Dynaco Transformers. This set is probably the same set used in the Dynaco Mark 3, 60 watt tube amp. The output transformer is more suited to HI-FI and bass amps than guitar amplification. But of course this is purely subjective.
Are you going to use solid state or vacuum tube rectification? Have you measured the High voltage winding? Is it 800 VCT? That's going to give you over 500 volts B+.
You can use a choke input power supply for 370-380 volt B+, but the inductance value of the choke will have to be quite large.

Keep in mind that UL connection + feedback = low distortion = totally sterile
I would go for normal pentode connection without any feedback. Plus, Marshall in the 60's had a UL-connected KT88 amp that was totally unreliable for guitar use . Look up the Marshall Major.

If anyone is up for a bigger bass amp project, I have all the circuit boards (or you can turret) and switches and transformers to make a Trace Elliot V8 using 8 KT88's. PM me if you're interested. I'm not really looking to sell or this would be in a different forum, but if someone is serious about making something, PM me. You could make the same thing on a slightly smaller chassis using 6 KT120 or KT150. Or, I have an old Sound City 120 that's in sad shape but good transformers, that's for 6 EL34's. Those are very similar to the transformers in HIWATT. I might just buy a HIWATT kit and use the Sound City transformers.
