As I understand it, you want to have some kind of portable "universal" DSP that you can use to test different systems. Well, then try to assemble it yourself, but if you need the result, not the process, I would consider ready-made solutions. But I am not dissuading you, you know better what is best for you.
Pretty much a stronger Dayton 408 DSP with USB in for audio and RCA pre-outs with 8Vrms. I'm not seeking a specific result. Just tinkering and measuring outcome.
I had a brain fart when I posted from work last night (night shift has wrecked my brain). The DSP I suggested doesn't do 12Vrms. I somehow mixed up the fact that the it can do +12dB digital gain. The output maxes out at 7.775Vrms balanced, so half that single-ended. :/
If you need higher output then I think you'll either have to use a higher end automotive specific DSP or use a custom soution.

Down4Sound just released their EZY DSP68 for relatively inexpensive, which has 4.2Vrms output at the RCAs. I could use a USB to SPDIF DAC into the DSP and then out to amplifiers. This will be my fall back if I can construct something myself with higher Vrms out.
