Don't get hung up on ground. If you connect your meter (the 3-wire one) to the floating Coleman thing, you don't need the power brick. You connect the three meter wires to the Coleman output, and that's it.
You can do the same for the measurement on the other, grounded supply. Just connect the three wires as shown in the data sheet.
It is only when you want to measure both outputs with a single meter, that you need to switch all three wires! And, even if you use a power brick for a single meter, you still would have to switch all three wires. You cannot leave one of the meter wires connected to both circuits at the same time, power brick or not.
If you don't want to switch, use two meters, without any power bricks. Cheap and safe.
Bottom line: the power brick doesn't solve anything and you don't need them. You can use them to insulate the meters from the rest of the world, but that is not what you need. The meter connects with three wires to any test object and not to anything else, so no need to insulate.
You want to use one meter, use a three pole switch. Or use two meters, probably cheaper that the switch.
