So, I noticed this transformer for sale on Digikey and I wonder what benefits it'll have to a typical higher-power headphone amplifier compared to a normal toroid like this, considering how much more expensive it is.
In addition, what's the difference between a potted and encapsulated transformer such as this one and a normal one like this? Is it worth the price difference?

Potting and encapsulating is sometimes done in an attempt to lower mechanical noise but usually has limited or no effect. It also looks nicer on equipment review pictures.
In general it is not the transformer that has an impact on the music but the rectification/decoupling and regulation if used. That's where your buck makes the most bang, so to say ;-)

The potted transformer is easier and quicker to mount. Possibly more fire retardant in a safety specific/hospital environment perhaps.
The first one you link to is a medical grade transformer.
A significant difference to a standard toroidal transformer, for audio, is the interwinding screen. This could well be beneficial as it helps to block VHF noise coupling from the primary to the secondaries.
The Triad one is also more efficient, has better regulation, (most probably) lower stray field and a higher insulation class than its industrial cousin. It also has a thermal fuse incorporated per socondary.

Alright, so basically, there's no difference from encapsulating and potting a toroid compared to not doing it.
On the other hand, the medical-grade one is better-built, has a thermal fuse and interwinding screen which could reduce noise, as well as a safety ground.
Would the extra money be worth it, I wonder...

Impossible to say, some people like the distortion caused by RFIWould the extra money be worth it, I wonder...
Both transformers will work ok but toroidal holds in magnetic fields better and doesn't radiate so much.
if you look at the second page of the data sheet , its all about leakage current. One spec gives "patient leakage current " maximums. This and extra testing is what the extra cost is for and I doubt it will make any audible difference in an amp. Medical, like military spec always costs more but rarely make a difference to us audio diyers.
