DAC project suggestions

My background and DIY goals are similar to yours. For me, the pleasures of DIY are greatest when doing an original circuit design, component selection, and PCB layout, before building the device. I favor the Cypress FX3 USB interface. The ready-made explorer kit does everything. Just add a DAC chip, glue logic, and some software. A foobar DSP plugin is an ideal starting place, but I usually spawn a 64-bit process to do the heavy lifting.
 
I was considering building one of Doede Douma's 8-stack DDDacs, but these are not currently available. This seemed like the kind of project I was looking for where there is a lot of room to customize the build.
I agree the DDDAC would be a great match to what you're describing, and it sounds really, really good. I have two DDDACs, and one is older than a decade, and I have not found any DAC that I like more. The DDDAC is a tweakers paradise as you can start small and then add/change things as you go. If the parts/modules are not available new at the moment, you can always get them second hand.
