I'm new to vinyl and am on the lookout for an MM cartridge for a Thorens TD160 with ortofon AS212 arm; is there anything I should pay attention to, e.g. given the specific characteristics of the tone-arm? Any recommendations for a good MM cartridge for 60$ or less?

The above will work well, it is equivalent to the latest Red but half the price.
Track at around 1.8g. If you want a higher resonant frequency :

Track at around 2.0g. Both are good choices.
The AS212 as I recall (I had one may years ago) has an alloy arm tube
and alloy headshell and so is quite lightwieght. For brass (chromium
plated) armtube heavier arms the AT110E would be a better choice.
Experimenting with the head shell washer can be worthwhile. One
option is to omit it and use a little PVA wood glue as a reversable
stiffener to the joint.
