I've recently bought a Numark SA3000, and one of the volume knobs has snapped off, along with the pot shaft.
The working pot is clicky when you turn it.
Does this mean that it is an encoder, or are there normal pots which have a clicky action?

Generally speaking, if you can turn the clicky knob forever without end, then it is an encoder. If it only turns up to a certain point and stops, then it could be multi-position switch (step attenuator) or simply a pot with detents.
Encoders are easy enough to find on Digikey. I ordered a couple for my amp build, $1.52 a piece IIRC.
