Can someone teach me a bit about the difference between these mosfets?

Noob question.

OK so I have no clue what I am looking at when I look at a data sheet. I can understand some of the basics, like maximum current drain and voltage. What I can't understand is how to tell if a device is going to be great for audio or just amazing.

For example, I have a mediocre amplifier here that uses a pair of 2SA1908 and 2SC5100 ouputs for each channel. I also see a 2 c2240, 1 A1358 and 1 c3421. I don't have a schematic but from what I am seeing I am guessing it is a 3 stage amplifier with parallel output transistors.

Personally I have built an F5 amplifier using irf240 and irf9240 outputs. The amp sounds wonderful.

I understand that circuit topology is a big factor in sound. What I want to know is this.

1. The datasheets look to be measuring different things for each mosfet, is this just different ways of displaying the same data on each device? If so I guess that means I will need to learn the different nomenclatures for the same measured spec.
2. Looking at the data sheets, from the little I know, it would look like I could plug in the IRF240 IRF9240 in place of the 2SC5100 and 2SA1908. What I don't understand is, what the differences between the two sets of devices would be. Or put simply, what would happen?
3. Comparing the 2sc5100 to the IRF240, how can I tell which one will sound/perform better in a circuit by looking at the datasheet.

The reverse way of looking at this, for me, is what would happen if I put the 2SC5100 and 2SA1908 as the outputs of an F5. How would that affect the sound and performance of the amplifier.

I understand that there may not be a simple answer to some of these questions but I appreciate any help in understanding this a little better.

I would say that there are 4 versions of output devices that can be used in Power amplifiers.
BJT - silicon
BJT - germanium
FET - lateral
FET - vertical.

I believe that all 4 need to be approached differently at the design stage.
I further believe that one cannot simply swap between any of these types when an amplifier is designed to perform properly with only one of those types.
