It is my understanding that a. a digital signal is expected to/from a (mini) USB connection and b. that while the PAM8403 output is regarded as digital it is actually a PWM signal. If this is so can I feed a USB port - perhaps to be connected to an iPhone - from a PAM8403? (I have attached the PAM8403 spec sheet.)

Still not sure I'm understanding your goal. Are you trying to send a line level analog signal to an iPhone? If that's the case, you need to use a USB audio device with an ADC.

What level input does an iPhone take? If it's line level then i'm set. if it's speaker then i just have to branch off of the output module's input.

Won't work. The mic input from a 3.5mm adapter has audio filtering meant for voice. It's not a general purpose audio input and it's also mono.

Just buy something like a Behringer UCA222. It's relatively cheap and you don't risk frying your phone.
