I have several inexpensive round plastic binding posts plates that come with cheap binding posts (Parts Express). I thought I would do a DIY upgrade by removing the metal binding posts, plugging the two screw holes, and drilling the flat plastic face to fit better quality binding posts.
Have any of you been able to source something like what is shown in the image that is just a blank, and isn't drilled for or come with the bindings posts? The Mundorf and other brands are well beyond my budget...

I have done that. I had to enlarge the cutout to accomodate the backside of the new posts.
Do be wary of post swith heavy metal content. I have found that the cheap plastic nutted 5-way posts will outperform much pricier posts. But those plastic posts are not often found on binding post cups, most people deem to buy the nferior cheap metal posted ones.

It's too bad that Parts Express don't offer blank versions of their "speaker terminal cups" so DIY-ers could drill them out for whatever binding posts they wish to use. I would think such a product would be fairly popular.

I like the ones we use. They have a small hole so weaken the panel the least, but fat fingers can make them hard to tighten sometimes. The plastic caps mean less metal, and cheap also means less metal. If one wants to get fancy one can sub in better posts, but i only ever did that once. Stay away from metal ones. The big solid copper ones i have used are some of the worst.
The ones we used are hard to find, the only retailer i have seen with them is Q-componens. I bought then a couple hundred at a time, and i can supply some if you’d like. Where are you in Canada, Canada Post is not cheap on the other end of Canada (minimum 2 kg packages, and a pair of these ar eon the order of 100g or so, room to amortize the postage across more stuff).

Parts Express does have terminal plates made from aluminum that are slick looking and work well in my projects. You can choose a variety of binding posts--either metal or plastic to suit your needs and budget. For the plates checkout these parts:
