Bias transformer question

Great.

I have this mono 6L6 amp out of an organ that's been setting around for a while. It's got some good really good iron and a big 19.5:1 PP transformer. I suppose it would make a good harp amp or perhaps a sub-woofer amp; I really don't need another mono hi-fi amp. It's got a really spacious chassis and several unused octal sockets (it used to have a second channel to power a field coil speaker). I'm looking for an odd project and none of those ideas work for me.

So, I was thinking of setting it up as a hi fi amp, but set it up so that it can play a wide variety of tube types. Basically, anything that can handle the 3K OT primarys that result from an 8 ohm load. Just to see if I can. Crazy but fun idea. Should be able to build it from the parts pile.
