Realtime monitor not good for sound except you can build a perfect low pass filter. Off line autobias are more suitable for tube amplifiers. It can use ADC , MCU , digital pot/Dac to made it. I use similiar autobias system for more than 15 years with very good result. No any side effect to sound quality but still easy to use,
