I’m soldering up some new speaker cables. Anybody know what that little wing is for. A stop? A crimp/clamp?

Doesn’t make sense.

For holding while soldering perhaps in order for the vise not destroy them.

I think the 'litle wing' may act as a locator to lock the Z plug into position when it is used with its plastic 'barrel'.

no, one is supposed to solder the cable onto the wing thing. Does make sense when considering the whole connector with case and not just the metal inlay you are currently looking at.
Those connectors are stackable.

Mine are not part of a system, just stand alone. Could be a vise holding tab, but why curved?

That might be it. The entire contact tube is split. If you solder the wire inside the tube that could stop the tube from flexing and making contact.
