Best First DIY Project

I'd like some recommendations for a first DIY project. Does not necessarily have to be audio. I just bought a WES51.

I was going to try to build this tube clock:
6 Digit Numitron Clock
But there's no BOM and I can't decipher the schematic well enough to order the parts.

Then there's this tube clock:
Single Numitron Clock
but I would need a PIC programmer and PC (I'm a Mac user).

I'm in need of a DAC, but many of them are very complicated. I'd like something that has a TOSlink, so I can use it with the Airport Express.

Any ideas for me?

a simple audioproject would be a chipamp imho.
and for a dac, there are some simple ones, USB to whatever is easy with a PCM2706
